A primary-aroma, citrus-led blend. A.I.R. Distillations describes Cuvée Blanc Cedro as a citrus-led expression and a primary-aroma blend. It is a blanc, or white/clear, style built around a citron core met by grapefruit and cooled by lemon verbena.[1],[2]
Composition & Vinification
White Grapes & Organic Apple and Pear — Fruit Base. The botanical distillates are blended with two selections of white grape varieties and with organic apple and pear, none from concentrate, providing the fruit foundation of the blend.[1]
Tasting Profile
Nose. The nose shows bright white peach and pink grapefruit zest with a hint of verbena.[1]
Palate. The palate carries bittersweet grapefruit, candied citron peel and a cool lemon-verbena herbality.[1]
Finish. The finish is clean, with a refreshing bitterness and finely balanced acidity.[1]

Pairings
Fish & Seafood. A.I.R. Distillations recommends Cuvée Blanc Cedro with white fish such as sea bass, cod, halibut and hake; oily fish including trout and salmon; shellfish such as scallops, prawns and lobster; and cephalopods such as octopus and squid.[1]
White Meats. It is recommended with chicken, turkey, duck, veal and pork tenderloin.[1]
Vegetables. Suggested vegetable pairings include fennel, zucchini, white asparagus, peas, artichoke, Belgian endive and spring onion.[1]
Cooking Methods & What to Avoid. The producer advises light cooking methods — steaming, poaching, papillote and roasting — while avoiding smoke and heavy reductions. Blue cheeses are also to be avoided.[1]

Ingredients Policy. Cuvée Blanc Cedro contains no preservatives, additives, flavourings, natural aromas or extracts. Its white fruits are organic, and all its grape and fruit components are not from concentrate.[1]
