Production Philosophy
NON1 Salted Raspberry & Chamomile is built rather than dealcoholized. It is assembled from whole, natural ingredients using culinary techniques instead of removing alcohol from wine, and it structures the drink around four flavor markers NON works to across its range: fruit, tannin, salt, and acid. According to NON, the aim is to "cook flavor in" using real food, in contrast to alcohol-free wine, which the producer describes as cooking the flavor out.[1],[2],[3]
NON positions its products as "wine alternatives," a category descriptor founder Aaron Trotman coined, and does not use conventional winemaking methods such as pressing, fermentation, or ageing. NON1 is the brand's bestseller, accounting for around 45% of global volume as of the February 2025 podcast interview.[3],[4],[5],[6]
Composition & Vinification

Verjus — Acidity. Verjus made from Semillon grapes sourced from the Barossa Valley, Australia, provides the acidity component. Verjus from the Barossa forms the base of all NON infusion blends.[7]
Tasmanian Raspberries — Fruit Pillar. NON uses Tasmanian raspberries that are freeze-dried (lyophilisation) to preserve their shape, colour, flavour, and nutritional content. The freeze-drying process removes 85% of the water molecules from the fruit, concentrating the flavour. In NON1 the raspberries are cold-steeped to maintain a fresh flavour rather than a jam-like sweetness, and the raspberry skins contribute a small additional amount of tannin. NON states the beverage contains at least one full punnet of freeze-dried raspberries per bottle, with the raspberries alone costing approximately $10–$12 per bottle.[8]
Chamomile — Tannin & Floral Finish. The chamomile is sourced from Egypt, described by NON as one of the world's largest producers of Matricaria chamomilla. It provides tannin and a creamy finish, contributing lingering tannins for a floral finish on the palate.[9]
Murray River Salt — Salinity. Murray River salt provides salinity to create what NON calls a moreish sensation.[7]
Sugar — Balancing Agent. Sugar is used to balance the final product, with the quantity adjusted according to the sweetness of the fruit.[7]
