Background
Before A.I.R. Distillations he had already brought a non-alcoholic drink to market, which by co-founder Ina Simone Averhals' account was placed in many Michelin-starred restaurants; the drink is described as having been built specifically for pairing with Michelin-level cuisine.
According to A.I.R. Distillations, Jones and Ruben Van Aken have been working through distillation techniques and botanicals together since 2018, well before the company itself launched in November 2025.
Role & Contribution
His first name is also embedded in the company's name: A.I.R. is an acronym for Alexandre, Ina and Ruben, and simultaneously refers to the volatile air phase in which flavour molecules are captured during distillation.
As of a February 2026 interview with Averhals, the company was bootstrapped and Jones was working on it part-time alongside Van Aken, with Averhals employed full-time at another company — a deliberate arrangement to test market reach before taking on investment.
Collaborations
Jones co-founded A.I.R. Distillations with Ruben Van Aken and Ina Simone Averhals, both of whom have extensive prior experience in distilling and in making non-alcoholic beverages. The two had previously co-founded Bôtan, a non-alcoholic distillery they ran through three years of research and two years on the market before losing control of the company in a dispute with its investor; roughly a year of regrouping followed before the three launched A.I.R. together.[1]
