Peder Schweigert

Culinary training. Peder Schweigert built his career in Michelin three-star restaurant kitchens, and was classically trained in a three-star Michelin restaurant in Chicago. He returned to the Twin Cities 15 years before a March 2024 account, taking up work managing and bartending.^[1]

Marvel Bar. Schweigert led Marvel Bar, an internationally recognized cocktail bar. Across roughly two decades of cocktail work he used botanicals such as bay laurel. His extensive background at Marvel Bar shaped his later work.^[1]

Schweigert is a founder of Dry Wit, a Twin Cities–based company producing non-alcoholic beverages built for the wine occasion. He is described as a co-owner and creator of the brand, which he co-founded with Megan Dayton. The Dry Wit lineup includes three sparkling beverages: Pippi, Salinger, and Bruce.

Schweigert co-founded Dry Wit with Megan Dayton. Dayton quit drinking on March 9, 2017, and the brand was created in part out of her personal need for sophisticated non-alcoholic options.
