Walker Brengel

Walker Brengel comes from the United States and is based in Berlin, where he met Felix Rank and Yannic Poepperling through a shared studio complex. All three have artistic backgrounds and were sharing studios in the north of the city. Together they founded BOUCHE, the Berlin kombucha brewery, in 2019.^[1]

Brengel is Founder and CEO of BOUCHE. He introduced his co-founders to kombucha during a group art show trip to the United States, where the drink had already established itself, and began home-brewing in the studio after the founders brought cultures back with them. The company's first makeshift brewing room was Brengel's five-square-metre painting storage, which it outgrew after more than a year spent concentrating on the fermentation process and basic kombucha flavour. BOUCHE produces its own starter culture in-house, which it attributes to Brengel's extensive research into brewing processes and to custom-built tanks and machines.^[2]
