Production Philosophy
Salinger is one of three sparkling beverages in the Dry Wit lineup, alongside Pippi and Bruce. Like its siblings, it is built on a tea base combined with verjus and carbonated with CO2.
Composition & Vinification
The declared composition is linden tea (water, linden flower), verjus, pear juice, apple cider vinegar, salt, and CO2. The linden tea supplies the botanical base, verjus and apple cider vinegar the acid components, pear juice the fruit element, with salt and carbonation completing the formula.[1]
Tasting Profile
Structure. Dry Wit positions Salinger as the heavier and more tannic of its bottlings.
