Milky Oolong Tea — Base. FIGA states that the Milky Oolong it uses is cultivated at an altitude of 1,100 metres in the Mesihan township of Chiayi County, Taiwan. The producer sources this tea through Biochi.
Production Philosophy
Milky Oolong is a kombucha from FIGA, the Antwerp producer founded by Yassine Ejdaa. Its base tea, also known as Jin Xuan, is a lightly oxidised oolong from Taiwan, oxidised to 15%, according to FIGA. The house method builds each product around one specific tea — Milky Oolong among them — through a single fermentation in which the tea carries the flavour from the start, rather than the more common route of a neutral first ferment followed by fruit or spice additions in a second.[1],[2]
