Production Philosophy

Cabernet Rosé is an alcohol-free rosé from Ôpia, built from a blend of Chardonnay and Cabernet Sauvignon grapes from France. Ôpia markets it as a non-fermented, non-alcoholic wine. It is certified organic and vegan.[1],[2]

The Pierre Chavin collection description sets out the process. The grapes are de-stemmed and crushed. The skins then undergo cold maceration at around 4°C for 8 hours before pressing, to extract polyphenols, anthocyanins, tannins, resveratrols, minerals and aromatic headnotes. Aromatic complexity is then built by maturing with infusions of organic seeds and French oak.[3]

Service

Shelf Life. Ôpia states that its entire range is pasteurized using natural methods during bottling, without chemical preservatives, giving it a storage potential of 5 years.
