Lapsang Souchong Tea -- Smoky Backbone. The base is a mature, broad-leaf tea finished over a pinewood fire, a processing step Unified Ferments credits with the tea's silky, luxurious, and unapologetically smoky character. This smoke and body form the structural and aromatic core of the ferment.
Sugar -- Fermentable Sweetener. Sugar serves as the fermentable sweetener for the culture.[1]
Tasting Profile
Palate. The ferment develops notes of conifer, peat, and sorghum, closing on a round lactic finish. The overall profile is described as velvety, silky, and smoky.[2]
Service
Temperature. Lapsang Souchong is recommended to be served at red wine temperature.
Pairings
Unified Ferments suggests pairing Lapsang Souchong with cereal grains, wild fungi, and bloody steaks, or anything that would pair well with a stiff plug of scotch.[1]
