Production Philosophy

The Flower and Its Name. The beverage takes its name from the snow chrysanthemum, a hardy, nutritionally dense varietal that grows in China's Kunlun Mountain area and spends nearly half its life buried under snow. According to Unified Ferments, this cold-climate adaptation gives the flower a character that departs substantially from the powdery delicacy of regular chrysanthemum, presenting instead a warm, enveloping, and verdant profile. Bon Appétit reported in February 2022 that surviving the cold causes the plant to produce more proteins and amino acids than regular chrysanthemum, which the article characterized as making it beefier and more gnarly; Good Drinks similarly noted in May 2021 that the flowers grow slowly under snow for much of the year and are consequently nutrient-dense.[1],[2],[3],[4]

Composition & Vinification

Declared Ingredients. Snow Chrysanthemum is made with filtered water, honey, kombucha starter, and snow chrysanthemum flowers.[2]

Tasting Profile

Appearance. In the glass the beverage shows a distinctive fluorescent color; press descriptions from 2022 and 2025 characterize it as amber-colored to amber-tinged. Unified Ferments notes that dried snow chrysanthemums carry an almost Cheeto-like smell when the bag is opened, per Good Drinks in May 2021.[1],[2],[3],[4],[5]

Nose. The profile is floral, with a warm, enveloping, and verdant character attributed to the flower's snow-burial adaptation. Good Drinks in May 2021 described the finished drink as floral and slightly tart, with notes of starfruit, honey, butter, and sometimes ham depending on the batch.[1],[4]

Palate. As it ages, the ferment develops notes of starfruit, shaved asparagus, and pollen. Unified Ferments likens its body and acidity to a juicy orange wine.

Service

Temperature. Snow Chrysanthemum is served chilled, at white wine temperature.[2]

Pairings

Unified Ferments recommends Snow Chrysanthemum with dim sum, tiger salad, and carnitas, or anything that wants a bit of acid to complement its heaviness.[2]
