Production Philosophy
Fermented Single-Origin Tea. Wen Shan Bao Zhong is a non-alcoholic fermented beverage built around a single-origin tea, produced by the Brooklyn-based label Unified Ferments. The base is a lightly oxidized, bright oolong grown in northern Taiwan. Rather than flavoring a neutral tea, the beverage takes its identity and name directly from the Wen Shan Bao Zhong leaf it highlights, one of a single-origin lineup in which each expression is named after the tea at its core.[1]
Composition & Vinification
Declared ingredients: sparkling water, sugar, kombucha starter, and Wen Shan Bao Zhong tea.[2]
Wen Shan Bao Zhong Tea — Aromatic Base. The base is a lightly oxidized, bright oolong produced in northern Taiwan and commonly consumed in Taiwan. The tea is sourced from a fourth-generation tea-producing family in the country's Nantou region. It is characterized by powdery floral notes, deep oat sweetness, and subtle salinity, qualities the fermentation is intended to carry through.[3]
Tasting Profile
Nose. The ferment shows notes of orchid, honeysuckle, and fresh marzipan, alongside powdery floral character.[4]
Palate. The palate carries powdery floral notes, a deep oat sweetness, and a subtle salinity, developing the orchid, honeysuckle, and marzipan character established through fermentation.[3]
Service
Temperature. Wen Shan Bao Zhong is recommended to be served at white wine temperature.[2]
