Production Philosophy

The defining method is live fermentation rather than flavouring. Zestea describes kombucha as the product of mixing a SCOBY — a symbiotic colony of bacteria and yeast — with sweetened tea, the acetic acid bacteria and yeast reacting with the sweet tea to give a sour, slightly effervescent fermented drink. The company states that its kombucha is not pasteurised, in order to preserve live probiotics, and that it contains no additives, with flavour direction drawn from natural herbal plants.[1],[2]

Composition & Vinification

No ingredient declaration specific to the Ginger & Turmeric bottling has been published. At the range level, Zestea states that Zestea Kombucha is made from tea, water, cane sugar, SCOBY and herbal seasoning, and that its individual flavours are derived from natural herbal plants — lemongrass and hibiscus (roselle) among them.

Honey-Scented Black Tea — Base. Zestea brews its kombucha with organic honey black tea sourced from Nantou, Taiwan, described by the producer as Taiwan local honey-scented black tea. The company also states that its kombucha is made using local organic tea leaves together with home-brewed fermented probiotic techniques.

Water — Yilan. The brewing water for Zestea Kombucha comes from Yilan.

Raw Cane Sugar — Fermentation Substrate. Zestea uses raw cane sugar sourced from Brazil in its kombucha production; it is the feedstock consumed by the culture rather than a sweetener retained in the finished drink.

SCOBY — Fermentation Culture. The symbiotic colony of bacteria and yeast is added to the sweetened tea and drives the acidification and natural carbonation of the base.

Fermentation Methodology

According to Zestea, the sweetened tea is fermented with the culture for 20 to 30 days, during which the yeast and acetic acid bacteria consume more than 90% of the sugar. The company gives a fermentation window of 25 to 30 days for its kombucha and attributes to it a beverage full of live probiotics, organic acids and antioxidants. Because the kombucha is not pasteurised, those cultures remain active in the bottle.[1]

Provenance & Sourcing

Production. Zestea Kombucha is crafted in small batches from carefully selected local ingredients and undergoes 25 to 30 days of fermentation in Yilan. Production takes place in a facility holding both HACCP and ISO22000 certifications.

Ingredients Policy. Zestea states that its beverages are built on authenticity, naturalness and no added chemical flavourings, and that its kombucha contains no additives. The company also reports that over 95% of the ingredients in Zestea Kombucha are sustainably grown, supporting local small farmers.
