A symbiotic culture of acetic-acid bacteria and yeast that ferments sweetened tea into kombucha. It forms a firm cellulose mat at the liquid surface and is carried from batch to batch.

How scoby is prepared

Pitched into sweetened tea, where the yeast converts sugar to alcohol and the acetic-acid bacteria convert that alcohol to acid, leaving a tart, low-sugar, lightly sparkling ferment.

Extracting an ingredient into a liquid or fat. Temperature and duration depend on the documented application.
