The name SIUS originates from Siusi, an Italian mountain village in the South Tyrolean Dolomites.[1] SIUS has roots in Siusi in the South Tyrolean Dolomites and continues its story in Vienna.[1] SIUS is based in Vienna, Austria.[2] SIUS products are produced by Michael Weissenegger by hand at his father-in-law's brewery in Ybbs an der Donau, Lower Austria.[2] SIUS was founded by Michael Weissenegger, who originates from Seis am Schlern in South Tyrol.[2]

SIUS produces fermented, alcohol-free drinks with botanical character called Proxies.[1] Sius proxies are entirely plant-based and contain only tea, herbs, fruits, woods, and spices.[3] Sius proxies are classified as alcohol-free, with only trace amounts of alcohol produced by kombucha fermentation.[3] Sius classifies its products as proxy wines — independent non-alcoholic creations composed from tea infusions, fruit extracts, herbs, spices, and fermented elements, inspired by wine but not made from grapes.[3] All Sius Proxies are alcohol-free.[4]

SIUS produces fermented, alcohol-free drinks with botanical character called Proxies.[1] SIUS combines fermentation, extracts, and infusions in its production process.[1] SIUS Proxies are characterized by a balanced combination of tannins, fine sweetness, fresh acidity, and complex structure.[1] All SIUS ingredients are processed by careful handwork.[1] SIUS products are produced by Michael Weissenegger by hand at his father-in-law's brewery in Ybbs an der Donau, Lower Austria.[2] Sius sources most of its ingredients from carefully selected dealers and producers in Austria and Germany.[3] Sius collects its tree needles directly from the forest.[3] Sius Proxies are produced through fresh fermentation of tea using a Scoby (symbiotic culture of bacteria and yeast), which produces organic acids and complex flavours during fermentation.[4] The fermented kombucha base is refined with extracts and infusions from botanicals including lemon verbena, nettle, hops, various types of pepper, tree needles, and selected woods.[4] Natural sugars from fruits and vegetables are used to balance the acidity of the kombucha base and give Sius Proxies structure and body.[4] Sius proxies are classified as alcohol-free, with only trace amounts of alcohol produced by kombucha fermentation.[3] Sius uses kombucha fermentation in the production of its proxies.[3] Sius deliberately avoids filtration in order to preserve aroma, depth, and complexity in its proxies.[3] SIUS uses fine tea varieties, hand-selected botanicals, and ripe, high-quality fruits as ingredients.[1] Sius proxies are entirely plant-based and contain only tea, herbs, fruits, woods, and spices.[3] Sius classifies its products as proxy wines — independent non-alcoholic creations composed from tea infusions, fruit extracts, herbs, spices, and fermented elements, inspired by wine but not made from grapes.[3] Tree needles and selected woods are used in Sius Proxies to add distinctive depth and a 'winey sensation'.[4] Sius proxies are not organic certified because the tree needles collected from the forest cannot receive organic certification, though almost all other ingredients are of organic quality.[3]
