Philosophy & What Sets Them Apart

Biodynamic farming underpins the fruit that goes into the bottles. According to Wachstum König, the cherries for Vogelkirsche 2025 and the fruit behind Mammutquite 2025 are both farmed biodynamically.[2],[3]

How the drinks are made

Pétillant naturel. Williams Birne Sparkling 2025 is made by the pétillant naturel method: ripe Packham pears are pressed and the juice ferments directly in the bottle.

Cold pressing, unfiltered and additive-free. Mammutquite 2025 is cold-pressed, left unfiltered, and bottled without any additives.

Fruit sourcing. The fruit is varietal-specific and, in one case, drawn from very old trees.[1]

  • Packham pears — pressed ripe for Williams Birne Sparkling 2025.
  • Pears for Conference Birne 2025 — fruit production takes place in Styria, Austria.
