Composition & Vinification
Lemongrass — Aromatic Base. The single declared botanical is lemongrass from Sri Lanka, used as a tea infusion. The sourcing is specified as the Amba Estate in the Uva Highlands of Sri Lanka.[1]
Tasting Profile
Nose. Aromas of citrus and balsamic herbs, with a hint of sweetness reminiscent of lemon-mint candy. Behind these sit notes of white flowers and spices — ginger, juniper, lime, galangal and white pepper.[2]
Palate. The texture is crisp, carried by lively bubbles, and the overall impression is refreshing and citric. AMA Brewery characterises the lemongrass expression as pronounced and unmistakable, to the point of surprising drinkers.[3]
Pairings
The variety is described as suited to the aperitif moment, and also as a pairing for dessert.
