Monkey Picked Tie Guan Yin Oolong — Aromatic Core. The Monkey Picked Tie Guan Yin oolong used in ARENSBAK White is harvested at 900 metres above sea level in Fujian province, China. The leaf is slowly dried and oxidised, which ARENSBAK associates with floral, citrusy and sweet notes.[1]
Tree-Picked Leaf — Regional Character. The tea leaves in ARENSBAK White are handpicked from trees rather than bushes. ARENSBAK credits the deeper root systems of those trees with imparting distinct regional characteristics and a rich flavour profile.[2]
Fermentation Methodology
ARENSBAK states that tannins, body and acidity are developed through the choice of tea, fermentation technique, ingredients and preserving methods, and that this yields a long, round aftertaste and a balanced dryness.
Service
Shelf Life. ARENSBAK products made from December 2023 onward carry a shelf life of three years from the production date; bottles produced before December 2023 carry a one-year shelf life from the production date.

Specifications. ARENSBAK White is a non-alcoholic beverage classified as a wine proxy. Nutritional values are declared per 100 g, and ARENSBAK states that residual alcohol in its products, originating from fermentation, does not exceed 0.5%.[2],[3]

Production. ARENSBAK is registered as the Danish company ARENSBAK ApS, CVR number 42816094, and is based in Copenhagen. All production processes are carried out by hand, including blending, stirring, tasting and scenting. ARENSBAK states that a bottle takes around six weeks to produce and that the recipes took more than two years to develop.
