Composition & Vinification
FIGA's Earl Grey kombucha is made with an Earl Grey tea blend built on Assam black tea from India, flavoured with oil extracted from the peel of bergamot oranges.[1]
Fermentation Methodology
FIGA works with a single-fermentation approach: the tea is the primary flavour source from the start, rather than the more common method of a neutral first fermentation followed by fruit or spice additions in a second fermentation.
Provenance & Sourcing
Production. Earl Grey is brewed in Antwerp, where FIGA produces approximately 1,000 bottles per month across all flavours; its largest fermentation vessel holds 200 litres. Ejdaa delivers to approximately 45 clients every Friday by cargo bike. FIGA's seasonal sales patterns place Earl Grey, alongside Rose and Jasmine, among the flavours selling most in summer.
Production Philosophy
Earl Grey is a single-tea kombucha from FIGA, the Antwerp producer founded by Yassine Ejdaa. FIGA builds each product around one specific tea — Milky Oolong, Lapsang Souchong and Earl Grey among them — treating the tea as the star rather than a neutral base to be masked by fruit or spice.
The flavour's place in the range is personal to the founder: Ejdaa grew up drinking loose-leaf Earl Grey with milk every morning, which led him to include an Earl Grey kombucha in FIGA's lineup.
