Production Philosophy
Lapsang Souchong is a kombucha from FIGA, the Antwerp producer founded by Yassine Ejdaa, built on a black tea originating in the Fujian province of China. The tea's smoky character comes from drying the leaves over pinewood fires, and that smoke carries into the finished ferment.[1]
