IBUKI

IBUKI is a bottled sencha green tea made from 'Kanaya IBUKI' tea leaves, a cultivar developed at a research tea garden over more than 20 years. It is built from only two inputs — water and tea leaves — with no additives and no heating. The producer, which shares its name with the tea, presents it as its flagship product, intended to change the "concept of Japanese tea".^[1],[2]

Expertise. IBUKI is supervised by a Japanese tea connoisseur holding a 6th dan rank and a hand-rubbing teacher qualification, described as one of only 39 such connoisseurs in Japan. According to the producer, the tea was developed in an environment that has received the Minister of Agriculture, Forestry and Fisheries Award and the Governor of Tokyo Award.^[1]

Kanaya Ibuki Tea Leaves — Umami and Aroma. The leaves are harvested in Shimada City, Shizuoka Prefecture; the current release uses an April 2025 harvest. IBUKI describes the Kanaya Ibuki leaf as dark green and glossy, thin and well-defined in shape like the tip of a sword, with an aroma it likens to dashi, Japanese soup stock.^[1],[3],[4]

Appearance. IBUKI pours a clear golden water color.^[1]

Nose. The tea carries a floral aroma.^[1]

Palate. The palate shows a mellow sweetness with a rich umami flavor, and a refreshing sweetness that lingers on the tongue. The umami taste is pronounced and the aftertaste is long-lasting; the producer states the tea can be tasted to its full potential with only a small amount.^[1],[5]
