A Fermented Tea Built Around Danish Bee Pollen. Bee Pollen is a kombucha produced by København Kombucha, one of a range of botanically infused fermented teas from the maker co-founded by Louise Benkjær Limbach. The defining feature of this bottling is bee pollen, infused into the fermented tea base. København Kombucha states the pollen is carefully cultivated and selected from a partner and expert in Northern Denmark. Among the range it is described as a bit drier than the other variants and a fine dining favourite.[1]
Composition & Vinification
Bee Pollen is made with water, kombucha culture, sugar, tea, bee pollen, and CO2, all from certified organic production.[1]
Bee Pollen — Aromatic Infusion. The bee pollen is cultivated and selected from a partner and expert in Northern Denmark. It contributes subtle bee pollen notes to the nose and mineral notes of straw and honey to the palate.[1]
Tasting Profile
Appearance. Straw yellow in color with a mousse.[1]
Nose. A nose of light acidity with citrus nuances of ripe Amalfi lemons, subtle bee pollen notes, and hints of white Mirabelle blossoms.[1]
Palate. A light, elegant body with refreshing, balanced acidity and mineral notes of straw and honey, without sweetness. København Kombucha describes it as a bit drier than the other variants in the range.[1]
