Composition & Vinification

Three ingredients are named for Diamante: chaga mushroom, mace and eleuthero.[1]

Chaga Mushroom. Chaga is one of the mushroom-based components; Yesfolk worked with @go.mushrooms to create the mushroom-based ingredients used in the drink.

Fermentation Methodology

House method at Yesfolk, as described in a July 2021 interview, is fermentation in oak barrels in a room carrying the producer's house culture, with an emphatically hands-off approach and no tinkering by way of extracts or additives. The same account likens the process to natural winemaking.[2]

Provenance & Sourcing

Production. Diamante is produced by Yesfolk, described in a July 2021 interview as a family-run kombucha microbrewery in Troy, New York. Adam Elabd and Yiyi Mendoza founded the company.[2]
