Dealcoholization

Here, dealcoholization means removing ethanol after fermentation, not making a drink that stays low in alcohol from the start.
Dealcoholization removes ethanol from a finished fermented drink, most often wine. Around 0.5% ABV is the usual threshold for a dealcoholized label, though rules vary by market. We rarely find these drinks convincing. The wine is made, industrially unmade, then patched up — ultra-processed wine, and too often it tastes dead.

Three process families are used: vacuum evaporation, membrane methods, and distillation. Vacuum evaporation, including spinning cones, lowers the boiling point so alcohol can leave at gentler temperatures. Membrane methods, including reverse osmosis, strip a thin stream of water and alcohol from the wine, remove the alcohol from that stream, and return the rest. Distillation separates alcohol through heat, making it the bluntest of the three.
Parameters
The main controls are target ABV, temperature, pressure, membrane selectivity, number of passes, and aroma recovery. Aroma compounds leave with the alcohol, and thermal routes generally lose the most. Recovery stages can capture some aromas and add them back, but they cannot restore the original wine intact. Alcohol also carried body and balance, so removing it changes how acidity, sweetness, and tannin feel.
Best For
Partial dealcoholization can be legitimate cellar work when a winemaker trims an over-ripe conventional wine by a degree. It also suits established alcohol companies that can reuse the same labels, shelf space, rituals, and distribution networks for alcohol-free versions. These products offer familiarity, and their “responsible option” role earns goodwill from regulators. Dealcoholization does not threaten Big Alcohol; it strengthens its position.
Comparison
A dealcoholized wine invites comparison with the wine it used to be, and it loses. A drink composed from scratch is judged as itself. What we respect is low intervention: controlled or arrested fermentation, special yeast strains such as Pichia kluyveri. These approaches build a complete drink that never contains much alcohol in the first place. That is where we see the future, for wine and for fermented drinks more broadly. We still judge bottle by bottle, and a great one could change our verdict, but none has yet.
