Composition & Vinification
MURI's website gives the declared ingredients as water, gooseberry juice, blackberry leaves, linden flower, wild rose petals, butter, and kefir culture. The product contains dairy allergens.[1]
Wild Rose Butter Fat-Wash — Texture and Floral Lift. The fruit base is fat-washed with butter that has been infused with wild rose petals. Per MURI's website, this butter fat-wash lends a soft, rounded texture the producer likens to fine oak ageing, while the rose contributes delicate floral lift and aromatic tension. Because dairy is used, the drink carries a dairy allergen declaration.[1]
Blackberry-Leaf Water Kefir — Structural Backbone. A water kefir scented with blackberry leaves is layered into the blend. The blackberry leaves are picked directly outside MURI's HQ, then bruised, oxidized, and turned into a tannic tea that provides structure.[1]
Foraged Linden Flowers — Aromatic Finish. The blend is finished with foraged linden flowers, listed on MURI's website among the declared botanicals.[1]
Pairings
MURI designed the blend for the start of ESSE's non-alcoholic pairing menu, where it opens the meal as an alternative to Champagne, intended to provide equal lift, texture, and sense of occasion.[1]
