Production Philosophy

Lineage. The blend evolved out of a collaboration bottle MURI made with Restaurant Kadeau in 2022, and is described as a descendant of MURI's Paradisbakkerne collaboration with that restaurant. Kadeau's signature pickled pine served as the point of inspiration, translated here into rhubarb pickled in a liquor infused with foraged Douglas fir.[1],[2]

Acetic Acid. Sherbet Daydream intentionally incorporates acetic acid to sharpen its acidity, which MURI notes is atypical for its blends. The acetic acid arrives via the Douglas fir needle pickle liquor.[3]

Name. The name refers to the sharp, fizzy sherbet powder found in traditional British sweets, capturing what MURI describes as the drink's bright, colourful and slightly nostalgic character.[4]

Composition & Vinification

Declared ingredients: water, red currant juice (13%), rhubarb (6.4%), juniper, Douglas fir pine needles (0.16%), vinegar, salt, sugar, and yeast.[1]

Svendborg Vinrabarber Rhubarb — Brightness and Texture. The rhubarb is Svendborg Vinrabarber (Svendborg Wine Rhubarb), an old Danish heritage variety originating from Funen and grown on the Danish island of Fyn. MURI sources it from organic grower Michael Balle in Denmark, and states the variety was selected for its bright, rounded acidity. The cultivar carries lower oxalic acid than many modern cultivars, which MURI links to a softer, rounder, crisp and juicy acidity. In the blend the rhubarb brings brightness, texture and vibrant acidity, with fresh rhubarb giving the drink its sharp, clean finish. After harvest it is cold-pressed without heating, freezing, or enzymes to preserve the ingredient as directly as possible. MURI has also described Sherbet Daydream as a rhubarb expression using the fermented and smoked Svendborg Vindrabarber rhubarb.[5],[6]

Douglas Fir Needle Pickle Liquor — Acidity and Resin. Douglas fir needles are foraged from woods near Lyngby, Denmark, and infused into vinegar to create a pickle liquor. This liquor is the core ingredient used to macerate fresh rhubarb, and a small amount is added again at blending time for extra tang. The acetic acid it carries piques the acidity and gives the drink a sharp, clean finish. MURI has also described the pickling vinegar as infused with Douglas fir and nobilis pine cones.[3],[7]

Juniper Water Kefir — Backbone. A juniper water kefir provides the backbone of the blend, adding structure and balance, and contributes a background creaminess.[1],[8]

Fermentation Methodology

The production sequence runs in stages. Rhubarb is first pickled in a mild vinegar infused with foraged Douglas fir. The pickled rhubarb is then macerated in a redcurrant wine. At blending time, a small amount of the residual pickle juice is added back to enhance acidity, with the juniper water kefir providing the backbone of the finished blend.[1],[9]

Tasting Profile

Appearance. A sparkling rosé-style cuvée, pink in the glass, with a tangy fizz.[8]

Nose. The drink opens with bright red fruit and fragrant notes of pine. The juniper and Douglas fir introduce a fresh, resinous quality.[4]

Palate. Lively acidity from the pickled rhubarb follows, over a crisp, juicy, energetic palate that closes dry, lightly herbal and pleasantly tart. Bright acidity and woodsy tannins from the fir provide structure to soft fruit, with a background creaminess from the kefir. MURI describes the blend as the most quintessentially Nordic in its range: bright and woodsy with a lively burst of pink fruit, rhubarb, subtle pine and a bright sherbet-like tartness. A sommelier described Sherbet Daydream as "a cross between a Christmas tree and the Barbie movie."[1],[4],[8],[10]

Pairings

MURI recommends Sherbet Daydream with oysters, raw or cured seafood, and light canapés, and specifically with smoked salmon and blinis, or chilled raw oysters and mignonette.[1],[8]

In Cocktails. Sherbet Daydream is the primary MURI ingredient in the 'Strawberry Daydream' cocktail, alongside fresh strawberry juice and simple syrup.[11]
