Production Philosophy

Cooking Flavour In. NON7 Stewed Cherry & Coffee is part of NON's chef-crafted range of alcohol-free wine alternatives built from real ingredients using culinary techniques rather than by removing alcohol from wine. NON frames its method as cooking flavour in with real food, in contrast to non-alcoholic wine which cooks the flavour out. Each product is structured around four markers — fruit, tannin, salinity, and acid — assembled to recreate a complex, wine-like experience at the table.

Composition & Vinification

Verjus — Acidity. Verjus sourced from Semillon grapes grown in the Barossa Valley, Australia, provides acidity. Verjus from the Barossa Valley forms the base of all NON infusion blends.[1]

Murray River Salt — Salinity. Murray River salt provides salinity and creates a moreish sensation.[1]

Palate. The palate shows rich dark fruits with undertones of coffee and a chocolate finish drawn from the cold brew.[2]
