What They Make

SAVEUR DRINKS is a German producer of alcohol-free beverages built around the table. Its lineup comprises five bottlings: Sparkling White Tea-Bergamotte, Sparkling Wildstrawberry, Lapsang Tea-Blackberry, Quince – Kumquat and Yuzu – Elderflower. Sparkling White Tea-Bergamotte is classified by the producer as a sparkling aperitif.[1]

How the drinks are made

Tea infusion as a counterweight. Tea is used structurally rather than decoratively. Lapsang Tea-Blackberry is a blend of fruit juice, tea and spice extracts, and Saveur says it deployed smoky Lapsang Souchong specifically to counter the fruit intensity of black cherry and aronia in that drink.

Leaf, flower and hedgerow botanicals. Sparkling Wildstrawberry is built on a broad botanical and berry list: blackberry leaves, raspberries, blackberries, passionflower herb, black and red currants, elderberries, rose hips, wild blueberries, mallows, water, grape must, sour cherry juice, currant juice and wild strawberry purée.

Provenance-driven sourcing. Two components are traced to a specific origin by the producer.

  • Lapsang Tea-Blackberry — black Lapsang Souchong tea from the Wuyi Mountains of Fujian Province, China; Saveur says it was especially pleased with this discovery while composing its fifth menu companion.
  • Yuzu – Elderflower — Japanese yuzu from Kochi Prefecture.

Sugar policy. Lapsang Tea-Blackberry is made with no added sugar.

Taste & Serving

Saveur recommends buying the drinks as a set, with each bottling matched to a course from aperitif through main course to dessert.[1]

The producer's own sensory descriptions run from smoke and bitterness to florals and tart fruit. Lapsang Tea-Blackberry is described as combining sweet blackberry, smoky Lapsang Souchong tea and fruity aronia notes with a slightly bitter edge. Sparkling Wildstrawberry is given aromas of ripe wild strawberries and cherries, with currant, rose-hip and blackberry-leaf notes and a tart, refreshing finish. Yuzu – Elderflower is described as pairing floral, tart elderflower notes with the sweet aroma of Japanese cherry blossoms. Quince – Kumquat is credited with a subtle sweetness from apricots and a subtle aroma of ripe mangoes.
