Production Philosophy
White is a sparkling tea from Acala, the Kaunas, Lithuania producer whose range is built as fine non-alcoholic sparkling tea with wine- and cocktail-like flavours and textures. It sits alongside Rosé, Red, Spritz, Winter Spiced and Mimosa in the house lineup, and is the bottling Acala enters in the White Wine Style sparkling tea class. Co-founder Martynas Žemavičius came to the project from a 20-year career in fine wines and champagnes in London.
Acala describes a production process that spans over half a year and runs in five steps: selection of fine organic ingredients, brewing tea in spring water over a live fire, fermenting tea in oak barrels, stainless steel tanks and glass jars accompanied by music, blending matured fermented teas with freshly made teas and other botanicals, and maturing the bottled sparkling tea in a cool, dark cellar. Ingredients are chosen by blind tasting to assess their flavours and aromas, and the house sources local raw materials from nearby farms wherever possible.[1]
Recognition
White took a gold medal two years in a row in the White Wine Style sparkling tea category at what Acala identifies as the world's largest non-alcoholic beverage competition. Acala also describes the bottling as a favoured choice for Michelin-starred restaurants.[1]
