Composition & Vinification

The declared composition is water, kombucha culture, passion fruit (0.75%), mango (0.25%), green tea, cane sugar (fully converted during fermentation), black tea, steviol glycosides from stevia, natural mango flavouring (0.3%), and vitamins C, B6 and B12.[1]

Green and Black Tea — Fermentation Base. Green tea and black tea form the tea base on which the kombucha culture works.[1]

Kombucha Culture — Fermenting Agent. A kombucha culture carries out the fermentation of the tea base.[1]

Passion Fruit — Lead Fruit. Passion fruit is the larger of the two fruit additions, declared at 0.75%.[2]

Mango — Secondary Fruit. Mango is declared at 0.25%, alongside a natural mango flavouring at 0.3%.[1]

Cane Sugar — Fermentation Substrate. Cane sugar is the fermentation substrate and, per BATU's declaration, is fully converted during fermentation.[1]

Steviol Glycosides — Sweetness. Sweetness in the finished drink comes from steviol glycosides derived from stevia.[1]

Production Philosophy

Passion Fruit & Mango is a kombucha from BATU Kombucha, flavoured with passion fruit and mango. It is built on a fermented tea base rather than a dealcoholized or blended soft drink: cane sugar is added for the ferment and, according to BATU, is fully converted during fermentation, leaving the finished drink sugar-free.[1]
