Tasting Profile
Composition & Vinification
The declared ingredient list is: water, verjus, fermented green tea (water, kombucha culture, green tea, raw cane sugar), elderflower extract, white grape juice from concentrate, cucumber distillate, rhubarb juice from concentrate, oak wood extract, natural aromas, and carbon dioxide.[1]
Fermented Green Tea — Umami Base. The fermented green tea is itself a compound ingredient, declared as water, kombucha culture, green tea and raw cane sugar. Fermented tea is named as one of the subtle umami layers on which the drink's profile is built.[1]
White Grape Juice — Fruit Layer. White grape juice is used from concentrate. White grape is named among the layers carrying the drink's profile.[1]
Elderflower Extract — Floral Lift. Elderflower enters as an extract and accounts for a touch of elderflower in the profile, with elderflower also appearing on the nose.[3]
Cucumber Distillate — Cooling Accent. Cucumber is used as a distillate and reads as cool cucumber in the glass.[1]
Rhubarb Juice — Mid-Palate. Rhubarb juice is used from concentrate and appears both on the nose and across the mid-palate.[3]
Oak Wood Extract — Structural Accent. Oak is present as a wood extract, giving what the tasting description calls a whisper of oak.[1]
Natural Aromas — Declared Additions. Natural aromas are declared in the ingredient list.[1]

Production Philosophy
EPICONE AIR is a non-alcoholic botanical drink produced by EPICONE, built on a fermented green tea base rather than on grapes alone, with white grape, elderflower, rhubarb, cucumber and oak layered around it. Its alcohol content sits below 0.5% by volume.[1]
In a January 2026 social media post, EPICONE described AIR as a new architecture for the contemporary table, designed for a gastronomy in motion.[2]
