Production Philosophy

Zestea Hibiscus Kombucha, also listed as Roselle, is one of the seven flavours in Zestea's core kombucha lineup, alongside Original, Lemongrass, Lemon Mint, Ginger Turmeric, Raw Oolong and Raw Tea Hop. Its character comes from hibiscus (roselle), one of the natural herbal plants Zestea uses to differentiate the flavours built on its shared fermented tea base.

The method behind it is kombucha in the classical sense: a SCOBY — a symbiotic colony of bacteria and yeast — is combined with sweetened tea, and the acetic acid bacteria and yeast react with that sweet tea to produce a sour, slightly effervescent fermented drink. Zestea does not pasteurise its kombucha, in order to preserve live probiotics. The brand itself began with home brewing kombucha before developing into a wider beverage brand built around flavour design, sense of ritual and lifestyle aesthetics.

Composition & Vinification

Zestea gives the composition of its kombucha as tea, water, cane sugar, SCOBY and herbal seasoning.

Honey-Scented Black Tea — Base. The kombucha base is brewed from Taiwanese honey-scented black tea, with the organic honey black tea sourced from Nantou. Zestea's kombucha is made using local organic tea leaves and home-brewed fermented probiotic techniques.

Yilan Water — Brewing Liquid. The tea is brewed with water from Yilan.

Raw Cane Sugar — Fermentation Substrate. Zestea uses raw cane sugar sourced from Brazil in its kombucha production; it is the feedstock consumed by the culture rather than a finished sweetener.

SCOBY — Fermentation Culture. The symbiotic colony of bacteria and yeast supplies the acetic acid bacteria and yeast that acidify and lightly carbonate the sweetened tea.

Hibiscus (Roselle) — Flavour Character. Hibiscus, or roselle, is the herbal plant that defines this expression, and it is the source of the berry flavour Zestea attributes to the drink.[1]

Tasting Profile

Nose. Zestea describes an enchanting floral and fruity layered aroma.[2]

Palate. The palate is given as a balanced sweet-and-sour, or sweet-and-tart, profile carried by natural fruit acidity, with a berry flavour from the roselle. Zestea characterises the overall impression as bold and refreshing. Across the range, Zestea's kombucha is described as smooth and sweet-sour with slight effervescence from first sip to last.[1],[2]

Pairings

Zestea points the Hibiscus Kombucha at desserts, naming Basque cheesecake, fruit tarts and macarons. Its bold, refreshing character is also proposed against traditional Taiwanese meat zongzi.[1],[2]

Provenance & Sourcing

Production. Zestea Kombucha is crafted in small batches from carefully selected local ingredients and fermented in Yilan, Taiwan. Production takes place in a facility holding both HACCP and ISO22000 certifications. The brand was founded in 2018 by Sharon Li Jialin and Cindy Chen Xindi.

Ingredients Policy. Zestea states that its kombucha contains no additives, and that authenticity, naturalness and the absence of added chemical flavourings are its basic principles. The company also says that over 95% of the ingredients in its kombucha are sustainably grown, supporting local small farmers.
