The fleshy calyx of the roselle plant, dried and infused for its deep red colour and sharp fruit acidity. Commonly sold and labelled as hibiscus.

Usage in beverages

Added to infusions and ferments for acidity and colour, where it reads as fruit rather than as a floral note.
