Production Philosophy

Ruby is a sparkling tea with 0% alcohol, composed in Switzerland by NINO, the company founded in 2023 by Maximilian Näf and Mudi El Saghir. Rather than a wine base, its structure is assembled from an infusion of tea and herbs, fruit juices, verjus, hops and plant extract, carbonated and bottled without added sugar.[1]

NINO positions its sparkling teas as a category of their own rather than dealcoholized wine, stating that its blends are composed from scratch using teas, fruit juices, herbs, spices and plant-based distillates with no wine base, and that each blend is developed with the support of French sommeliers to achieve depth, balance and structure.

Composition & Vinification

Declared composition: water, a tea and herb infusion (jasmine, elderflower, hibiscus, rose petals, lavender, lemongrass), fruit juices (white grape, apple, cranberry, cherry, peach), verjus, Enigma hops, salt, cayenne pepper plant extract, antioxidants (citric acid and malic acid), and carbonation.[2]

Tea and Herb Infusion — Aromatic Core. The infusion is built from jasmine, elderflower, hibiscus, rose petals, lavender and lemongrass.[2]

Fruit Juices — Fruit Body. Five juices are used: white grape, apple, cranberry, cherry and peach.[2]

Enigma Hops — Botanical Component. The blend includes Enigma hops.[2]

Salt and Cayenne Pepper Plant Extract — Seasoning. Salt and cayenne pepper plant extract are both declared ingredients.[2]

Citric and Malic Acid — Antioxidants. Citric acid and malic acid are declared as antioxidants.[2]

Carbonation — Mousse. Carbonation is listed among the declared components.[2]

Tasting Profile

Appearance. Vibrant coral red, with fine, elegant bubbles.[3]

Nose. Red berries and hibiscus, with a hint of jasmine.[3]

Palate. Delicately fruity, marked by citrus zest and floral undertones.[3]
