Koji Rice Series 1 is a limited edition series released on March 27, 2024.[1] Koji Rice Series 1 is part of a planned three-expression series, with each expression completely different in style from the others.[1] Koji Rice Series 1 is named as a nod to the iconic rapper KRS-One.[3] Koji Rice Series 1 is inspired by the Danish classic dessert risalamande and has creamy, smooth tasting notes with cinnamon and almond.[2]
Key Ingredients
Koji Rice Series 1 is made by growing koji on steamed rice, then mixing with water and fermenting with a cultivated yeast, inspired by sake.[1] Koji Rice Series 1 is finished with a smoked lavender kefir, where lavender is smoked over beechwood before being used to perfume the blend.[1] Koji Rice Series 1 contains mahleb (Prunus mahaleb), a cherry pit traditionally used in Middle Eastern recipes, which provides a warming undertone to the blend.[1] Koji Rice Series 1 is a unique, earthy, and floral blend of koji rice and smoked lavender with a spiced touch of mahleb.[4]
