Uzume is a dry sparkling rosé inspired by the combination of strawberries and cream.[3] Uzume is a collaboration with 12-Michelin-star chef Anne-Sophie Pic.[1] Uzume took 2.5 years to develop, during which MURI visited Maison Pic restaurant multiple times to fine-tune the flavours.[3]

Uzume uses carbonic maceration as one of three fermentation techniques applied to strawberries.[1] Carbonic maceration in Uzume involves sealing fresh strawberries inside a CO₂-rich tank with no oxygen and no added yeast, causing the berries to ferment from the inside out.[1] Uzume uses strawberries fermented in three different ways: carbonic maceration, lacto-fermentation, and with a wine yeast.[3] Uzume's creaminess comes from yoghurt whey included in the blend.[3] Uzume contains an ice-clarified tomato wine that adds complex savouriness to the blend.[3] Uzume includes vanilla that has been gently smoked over beechwood in MURI's smokery.[3] Uzume is a collaboration with Chef Anne-Sophie Pic described as a gastronomic take on strawberries and cream.[4]
