Origins & Story

Kombucha Inc. traces its beginning to 2019, when its first brew was made at home as a collaboration between friends. The company was founded around the ambition to make a non-alcoholic beverage capable of spanning a wide sensory range, from a refreshing soft drink to something as complex as natural wine.[1]

In mid-2023 the company opened a micro-brewery in the Meatpacking District of Copenhagen, where its kombucha is handcrafted. The microbrewery also serves as a pickup point where customers can collect their orders.[1]

What They Make

Kombucha Inc.'s lineup includes 2-2 MANGO, THE STINGER, PREMIUM, BRILLIANCE, and AURORA. The majority of the company's kombucha products are non-alcoholic, though some contain alcohol, and its products are offered in both pasteurized and unpasteurized versions. A Five-Pack bundle contains three bottles of 2-2 MANGO and two bottles of THE STINGER.[3],[4]

The range positions individual releases against different reference points. 2-2 MANGO and THE STINGER are framed as craft beer alternatives with a low-alcohol experience, while PREMIUM is positioned as a wine alternative and an alcohol-free alternative to white or orange wine. AURORA is a sparkling kombucha built on yuzu.

Techniques & Ingredients

Extended double fermentation. PREMIUM is produced using an extended double fermentation process to develop its flavor profile. It carries a maximum alcohol content of 0.8% vol from fermentation and is described as semi-dry.

Pasteurization and filtration. The company offers both pasteurized and unpasteurized variants across its range, a choice applied to 2-2 MANGO, THE STINGER and PREMIUM. AURORA departs from this, being both unfiltered and pasteurized.

Fruit & botanical additions. Beyond the common base, individual releases layer in distinct components.

  • AURORA — yuzu juice, blending the zesty essence of Japanese yuzu fruit into the fermented tea base
  • THE STINGER — habanero chilli, added to the mango-and-vanilla base for a sweet-spicy blend
  • 2-2 MANGO, PREMIUM — blackberry leaves and safflower petals within the shared base

Alcohol content. Alcohol across the range arises from fermentation and is capped at low levels. THE STINGER and 2-2 MANGO carry a maximum of 0.5% vol, while PREMIUM and AURORA reach a maximum of 0.8% vol.

Recognition

PREMIUM was awarded 92 points by Falstaff magazine, placing it in the publication's 'Excellent' category.
